This cotechino has a fine texture even after boiling, and none of the acrid taste that some of the pre-cooked versions have. If you've never tried cotechino on the grill, you'll be amazed at how this one tastes cooked over an open flame. The salami is made at Licini Brothers in Union City, NJ. It's shipped from frozen in airtight cooler bags via Two day Overnight Delivery. (Two-day Delivery is available in Cooler Weather.)
