Ambix Spirits started production April 2019. For our first three years we produced our spirits on nights and weekends at Essential Spirits using their Stupfler Alambic still. Dave and Andrea taught us a a great deal and got us on our feet and we’ll be forever grateful. Our Sebastopol distillery started operations in late 2022. Our own orchard, which we began planting in 2019, will become our primary source of apples in a few years, and for now is providing an ever increasing amount of fruit for specialty batches.
